Vegan & Gluten-Free Chocolate Chip Cookies

This recipe is great for folks who enjoy a chocolate chip cookie that is a little crispy and a little chewy. Our perspective on baked goods is that they are only as good as the intention of the baker and the quality of the ingredients used. Pick up some wholesome vegan butter, gluten-free flour blend, natural sugar, and just a few other ingredients to bake these tasty delights, and offer them to others with lovingkindness.


  • ½ cup vegan butter (room temperature)
  • 1 cup sugar
  • 2 Tablespoons ground flax + ¼ cup water
  • 1 teaspoon vanilla
  • 1 teaspoon molasses
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • 2 ¼ cups gluten-free flour blend of choice
  • 1 cup vegan chocolate chips


  1. Preheat oven to 350 degrees.

  2. Mix together ground flax and water, let sit for 10 minutes.

  3. Using a hand mixer or the paddle attachment on a stand mixer, cream together butter and sugar until light and creamy.

  4. Add the flax mixture, vanilla, molasses, and salt, mix to combine scraping sides of bowl with a rubber spatula if needed.

  5. Stir the baking soda into the gluten-free flour, then add to the butter mixture, mix until just combined.

  6. Add chocolate chips, and mix until well distributed.

  7. Drop a rounded tablespoon of cookie dough onto a parchment lined baking sheet.

  8. Bake for 12 to 15 minutes, rotating the pan once halfway through.

  9. The cookie dough can also be frozen once portioned and baked as needed.
