Ingredients
- ½ cup vegan butter (room temperature)
- 1 cup sugar
- 2 Tablespoons ground flax + ¼ cup water
- 1 teaspoon vanilla
- 1 teaspoon molasses
- 1 teaspoon salt
- ½ teaspoon baking soda
- 2 ¼ cups gluten-free flour blend of choice
- 1 cup vegan chocolate chips
Instructions
Preheat oven to 350 degrees.
Mix together ground flax and water, let sit for 10 minutes.
Using a hand mixer or the paddle attachment on a stand mixer, cream together butter and sugar until light and creamy.
Add the flax mixture, vanilla, molasses, and salt, mix to combine scraping sides of bowl with a rubber spatula if needed.
Stir the baking soda into the gluten-free flour, then add to the butter mixture, mix until just combined.
Add chocolate chips, and mix until well distributed.
Drop a rounded tablespoon of cookie dough onto a parchment lined baking sheet.
Bake for 12 to 15 minutes, rotating the pan once halfway through.
The cookie dough can also be frozen once portioned and baked as needed.
