This granola has been a breakfast staple for many years at Spirit Rock. It’s possible that over 100 Spirit Rock cooks have prepared it, and now you can too! Improvise with the recipe by adding a ½ cup of one or two types of nuts to the mixture or tossing the baked and cooled granola with your favorite dried fruit. The recipe doubles nicely, so you can prepare some for yourself and also a friend.
Dry Ingedients
- 3 cups rolled oats
- 1 cup unsweetened coconut flakes
- ½ cup sunflower seeds
- ½ cup sesame seeds
- ½ teaspoon salt
- ½ teaspoon cinnamon
Wet Ingredients
- ½ cup sunflower oil
- ½ cup dark maple syrup (sometimes labelled “Grade A”)
- 2 teaspoons molasses
- ½ teaspoon vanilla
Instructions
In a large bowl, mix all dry ingredients until well combined.
In a smaller bowl, mix all wet ingredients making sure everything is thoroughly incorporated.
Add the maple syrup mixture to the dry ingredients, stirring well to ensure all the oat mixture is evenly coated.
Spread the mixture onto a parchment lined baking sheet.
Bake at 325 degrees for 25 minutes, rotating the baking sheet midway through.
Cool before transferring to a storage container.
